Pepe Raphael in his Portland chocolate kitchen

Pepe Raphael · Portland, Oregon

La Historia

From the stage to the ganache.

Pepe Raphael left Madrid for New York, then landed in Portland in 1985 — not for chocolate, but for the stage. He danced with Oregon Ballet Theatre, and the discipline of ballet never left his hands.

His love affair with cacao started in 1962, when he was four. Decades of tasting, traveling, and pastry-sampling later, he finally decided the world deserved the recipes he had been composing in his head.

Original Sugarpep recipes, each a different cacao adventure of complex, interesting flavor. Let your taste buds be the judge.
